Grain-free Cinnamon Raisin Bread

Last week was a less-than-ideal week. I am not going to even get into all that that means because its really boring and I would get all grumpy about it again. I will focus on the fact that after a crap week, I really wanted a cookie. Since I can’t do chocolate (which really sucks) I have to think outside of the cookie box. I was thinking about doing Paleo Parents N’oatmeal Cookies, but I didn’t have all the ingredients. So I just started throwing things together in my food processor to see what I would get out of it.

Not cookies…

As it turns out, I didn’t make a cookie, not even something remotely close to a cookie. What I did make, however was the most delicious mistake I think I have ever made. My kids woke in the morning to a loaf of delicious grain-free cinnamon raisin bread instead. So since we had a great raisin bread, I decided to make Grain-free Raisin Bread French Toast. Pow!

Then I made the mistake of Instagram-ing and Facebook-ing my photos and folks were a little displeased that I wasn’t sharing the recipe. So, I made a second loaf…. and a third, well because I am a perfectionist and really wanted it to be just right before I shared it.

See… its sort of a swirl

What I ended up settling on was a yummy grain-free bread, sweetened with ripe bananas (and it doesn’t taste like banana bread!) with a pseudo raisin bread swirl. I say pseudo because since its not a heavy rollable bread dough, it doesn’t exactly swirl like a big yeasty bread. I think the layer of sweet raisin/cinnamon really boosts the loaf to a little piece of heaven (yeah, my heaven is filled with chocolate that I can eat without a reaction, warm raisin bread with a pat of melting butter and steamy coffee with heavy cream which I can tolerate, because its heaven). Anyway- you can make this bread without the “swirl” filling, I would just increase the raisin in the recipe by about half cup, but geez, why wouldn’t you want a little swirl to your bread? That sounds sorta hip, get yo swirl on!

Ingredients
  1. 1 1/2 cup almond flour
  2. 1/2 cup arrowroot powder
  3. 2 medium bananas, very ripe
  4. 4 eggs
  5. 1/2 cup lard or palm shortening, room temperature
  6. 2 teaspoons vanilla extract
  7. 1 1/2 teaspoons ground cinnamon
  8. 1 teaspoon baking powder
  9. 3/4 teaspoon baking soda
  10. 1/8 teaspoon sea salt
  11. 1 1/8 cup raisins, divided
"Swirl" layer
  1. 1 cup raisins
  2. 1 1/2 cup filtered water
  3. 1/8 cup arrowroot powder
  4. 1 tablespoon ground cinnamon
  5. 1 teaspoon vanilla extract
Instructions
  1. 1. The night before, place the raisins and water in a small bowl or mason jar and refrigerate for at least 6 hours.
  2. 2. Drain the raisins and add the raisins, arrowroot, cinnamon and vanilla extract to the bowl of a food processor.
  3. 3. Blend until it is smooth. Set aside.
  4. 4. Preheat the oven to 350 degrees. Line a bread pan with parchment paper.
  5. 5. Combine almond flour, arrowroot, cinnamon, baking soda, baking powder and sea salt. Set aside.
  6. 6. Add the bananas to the food processor and blend until smooth.
  7. 7. Add the lard and vanilla extract to the processor and pulse until smooth.
  8. 8. Add the eggs and pulse to combine.
  9. 9. Add dry ingredients to the processor and pulse to combine.
  10. 10. Add the raisins to the batter and blend with a wooden spoon to combine.
  11. 11. Add 1/3 of the batter to the bottom of the bread pan. Tap the pan on a surface to level the batter.
  12. 12. Add half of the raisin puree over the top of the batter layer and smooth evenly over the bread batter.
  13. 13. Add the next 1/3 of the bread batter and repeat with the second half of the raisin puree.
  14. 14. Top with the remaining batter and tap the pan again to level the batter.
  15. 15. Add the remaining raisins to the top of the bread.
  16. 16. Bake at 350 degrees for about 40 minutes.
  17. 17. Allow to cool in the pan for at least 1 hour.
  18. 18. Slice and enjoy!

Ingredients
  1. 6 Slices Grain-free Raisin Bread
  2. 1/2 cup coconut milk
  3. 2 whole eggs, room temperature
  4. 2 tablespoons coconut oil, melted
  5. 1 tsp vanilla extract
Instructions
  1. 1. In a small bowl, beat the eggs until light yellow and runny.
  2. 2. In a wide, shallow bowl or dish, blend together, milk, eggs, oil and vanilla extract until well combined.
  3. 3. Heat a heavy bottom pan (we like using our cast iron skillet) on medium-high heat.
  4. 4. Once pan is heated, soak bread, one slice at a time, in egg mixture.
  5. 5. Transfer soaked bread to the pan and cook on each side until browned. (We use the "pancake" test to be sure that the egg is cook- press down in the center and if it springs back, your good to go)
  6. 6. Serve immediately with (or without!) maple syrup and enjoy!
